The weather may be miserable but all the more reason to inject a bit of Summer into your day! This gorgeous salad from Burritos and Blues has us dreaming of al fresco dining in warmer, sunnier weather..

• Cinco de Mayo Special Summer Salad: Crisp romaine lettuce, mexican or lime rice, roasted adobo corn salsa, grilled meat or veg of your choice, drizzled in a delicious chipotle-honey vinaigrette.

The salad costs €6.50, and is available from both the IFSC and Wexford Street stores. It is an ideal way to get your Mexican fix without loading up on carbs, and suffering from the post-lunch slump. Get involved this lunchtime!
